Gut Healing Berries & Cream Gummies


Natural gummies recipe

These homemade Healthy Gummies are an all-time favourite of mine! I make a batch for the family every week and keep them ready in the fridge for those times when I'm craving something sweet and usually 'naughty'. My god-daughters love helping me make them in the kitchen in their favourite fruit juice flavours (usually cherry); but this duo flavour combination is my personal favourite as they remind me of raspberries and cream jellies, which unlike homemade; are full of processed sugars, poor quality porcine gelatine, artificial colours, particularly red - E120, 121, 122 and E123 (known to cause behavioural hyperactivity).

In complete contrast, my gummies are made with real fruit juice and coconut milk, they contain essential vitamins, minerals and healthy fats with zero artificial colours, sweeteners or refined sugars, so are the perfect choice for a snack. They are rich in gut-healing collagen protein and glycine for brain function and liver detoxification. A great healthy treat for kids and ‘big kids’ alike! You don’t have to worry about high fructose corn syrup or artificial ingredients and nasties when making these quick and easy healthy candy alternatives, and the kids will love helping you make them in the kitchen as well...they especially love the cleaning, when they can peel off and eat any remaining jelly from the moulds :)

Here is the simple recipe:

Makes approx. 40 gummies

You will need:

Silicone moulds /

or Lined tray

Ingredients:

1 Cup Berry Juice*

1 Cup Coconut milk

6 Tbs Grass Fed beef gelatin (I use Gelatin Australia Peptipro orange container)

1 Tbs pure maple syrup

1 tsp vanilla extract

Directions:

These gummies need to be made in two separate layers. The first berry (red) layer is made first and is set, before making the second coconut (white) layer and setting again.

Berry Layer:

Add the berry juice and 3 tablespoons of gelatin to a pot. Heat over the stove on medium heat until the gelatin has dissolved, stir regularly. Do not allow it to boil.

Pour the mixture into silicone moulds, dividing it evenly up to half-way in each mould segment.

Set it in the freezer for 15 minutes or until set

Coconut Cream Layer:

Pour the coconut milk, maple syrup, vanilla extract and 3 tablespoons of gelatin into the pot. Heat over the stove on medium heat until the gelatin has dissolved. Stir this regularly and do not allow it to boil.

Pour the coconut mixture on top of the berry flavoured gummies that are already set in the moulds to fill the rest of the mould to the top.

Set in the freezer for another 15 minutes or until set.

Gummies should be firm to touch, with a normal, bouncy ‘gummy’ consistency.

Remove gummies from the moulds and enjoy!

Store in an airtight container in the fridge (last up to 2 weeks).

*You can use any fruit juice that you like, except real pineapple or kiwi juice as these contain natural proteolytic enzymes (protein enzymes) that prevent the gelatine from congealing.
